Sugars end in -OSE (maltose, sucrose, lactose, glucose). Enzymes end in -ASE (maltase, sucrase, lactase, amylase). For carbohydrate digestion enzymes you need: salivary amylase (mouth), pancreatic amylase (small intestine), maltase, sucrase and lactase (small intestine). Get the suffix right or lose the mark.

Microwave oven misconceptions — radiation 'causes cancer', food must 'cool down' before standing

Very few candidates gave the correct response. Candidates need to fully understand the reasons for leaving food to stand for a few minutes after microwave cooking. This seemed to not be fully understood with incorrect responses such as the need for food to cool to avoid burning the fingers or mouth and the need for the radiation waves to disappear as these are dangerous. There were many misconceptions around the danger of radiation posed by microwaves and candidates often incorrectly stated that microwaves could cause cancer and were unsafe.

How to fix this

Microwaves are non-ionising radiation — they CANNOT cause cancer or make food radioactive. Standing time after microwave cooking lets HEAT CONTINUE TO CONDUCT through the food (the centre is often cooler than the edges) so that the whole dish reaches a safe temperature throughout. The phrase examiners want is 'to allow heat to be distributed evenly throughout the food' — not 'to cool down' and not 'to let radiation fade'.

Memorise the storage temperatures exactly: FREEZER −18 °C or below (this stops bacterial growth and slows enzyme action). FRIDGE 1–5 °C (slows bacterial growth but does not stop it). DANGER ZONE 5–63 °C (where bacteria multiply most rapidly). HOT HOLDING above 63 °C. Mixing up freezer and fridge temperatures is the most common slip — write the freezer figure with a minus sign and the fridge figure as a small positive range.

Lock down the fat hierarchy: SATURATED fats — solid at room temperature, mostly animal sources (butter, lard, fatty meat, cheese), single bonds only, raise LDL cholesterol. UNSATURATED fats — usually liquid at room temperature, mostly plant sources, contain double bonds. Within unsaturated: MONOUNSATURATED (one double bond — olive oil, avocado, almond) and POLYUNSATURATED (multiple double bonds — sunflower oil, fish oil, walnuts). The correct spelling is MONOUNSATURATED (not 'monosaturated' — examiners flag this regularly).

Memorise which cooking method gives which classic dish: CREAMING — Victoria sandwich, fruit cake, cupcakes (fat + sugar beaten until light, then eggs and flour folded). MELTING — chocolate brownies, gingerbread, flapjacks (butter and syrup melted, then dry ingredients stirred in). WHISKING — Swiss roll, fatless sponge, fruit flan (eggs and sugar whisked to a ribbon, flour folded). All-in-one cakes are LOWER skilled than creaming and will be capped. When asked for 'sweet' or 'savoury', double-check at planning time — sweet scones in a savoury slot is a wrong-choice cap.

The s24 P02 report warns: 'Recipes must be carefully checked for hidden animal ingredients, such as oyster sauce (seen in several candidates' choices), and ingredients that can be easily overlooked, such as eggs, cheese or butter. Two components. Paper 1 is a 2-hour theory paper (100 marks) split into Section A short answers, Section B structured questions and Section C extended-response choice (questions 12 and 13). Paper 2 is the Practical Test (100 marks) — 1 hour 30 minutes for planning followed by a 2 hour 30 minute (150 minute) cookery session, with the Choices and Recipe sheet, Time-plan and one clear hard-copy photo of all final dishes submitted for moderation.

How long should the Paper 2 time-plan be and what must it include?

The time-plan should fill the full 150 minutes — no less, no more — and use a maximum of two planning sheets. Examiners adjust marks down for over-detailed plans that run beyond two sheets. The plan must show preparation, cooking method, oven temperature, cooking times, dovetailing, special points (how each dish is tested for being cooked) and serving order, identifying which dishes are for parts (a) and (b) and how they meet the test requirements.

How are Paper 2 scaled marks rounded and what's the cap for a wrong dish choice?

Cambridge requires scaled marks to be rounded DOWN, never up; half marks must not be awarded. The interactive working mark sheets on the Cambridge website total and scale automatically. For a wrong dish choice, Choices is capped at 2/4 and Results at 4/7. A dish reduced to 3/4 in Choices for low skill is then capped at 5/7 for Results. If a dish is awarded 4/4 for Choices it is marked out of 7 for Results.
